Montpak Beef Steak Tomahawk Rib Aa Dry Aged

Tomahawk AA Aged Prime Rib (4x1 Montpak) - Prepared from a 12 rib forequarter. The rack (ribs) with flank is separated by sawing between the 5th and 6th rib. The flank is separated from the rack (ribs) by a saw cut perpendicular to the ribs and 8" from the eye. The rib cap ("calotte"), blade bone, dorsal tendon, and dorsal bones are removed. The ribs are 100% denuded so that the 7 rib rack can be cut with a knife between the ribs.
