It was invented by a French pharmacist, Antoine Augustin Parmentier, who hoped to combat famine with this recipe. Although things have changed considerably since then, hachis parmentier remains popular on this side of the Atlantic. Potatoes, with or without their skins, contain vitamin B6, which plays a role in red blood cell production and aids in the development of the brain and nervous system.
