Pizza mozzarella is an ideal cheese for chefs, being very versatile as well as tasty. This semi soft cheese has a delicate taste of milk and butter however slightly acidulous. It melts and stretches in long strands and browns at high temperatures. Unlike most other cheeses, which consist of modified milk protein, pizza mozzarella is made of whole, partly skimmed or skimmed milk.
